Assyrtiko by Gaia Wild Ferment by Gaia Wines is a dry white wine made from 100% Assyrtiko, expressing a more complex, wild, and highly expressive side of Santorini. Winemaking with indigenous yeasts and fermentation in different types of barrels give the wine greater depth and a more layered character, without losing the variety’s signature minerality. On the nose, aromas of ripe citrus, white-fleshed fruit, honey, smoky notes, and subtle oak nuances stand out. On the palate, it is full-bodied, rich, and strongly structured, with lively acidity that keeps everything balanced and a long finish with mineral and slightly saline impressions.
