Areti White by Biblia Chora Estate is an Assyrtiko with calmer but very pure strength. It does not come from Santorini, but from the Ampelia area in Pangaio, on limestone and clay soils, and this gives it its own rhythm: less wild, more refined, with minerality, lemony intensity and lovely structure. Here, Biblia Chora Estate shows its more Greek and strictly elegant side, working with Assyrtiko in a pure way and without unnecessary decoration.
In the glass it has a bright blond-green colour and reveals lemon, orange, bitter orange, citrus fruit, subtle honey notes and a characteristic metallic sensation. Fermentation in stainless steel tanks keeps the expression pure, while ageing on the lees for several months gives more depth, volume and potential to evolve over time.
On the palate it is dry, full-bodied and refreshing, with vibrant acidity, firm structure and a long finish that leaves citrus fruit and mineral hints. Put it next to grilled fish, shellfish, shrimps, lemony seafood, chicken with herbs, fava or mature white cheeses. An Assyrtiko with finesse, intensity and seriousness, for those who want something pure, Greek and with lovely ageing potential.
