Thalassitis Gaia Wines

Thalassitis by Gaia Wines is a dry white wine made from 100% Assyrtiko, expressing the authentic character of Santorini with clarity and intensity. It comes from old vineyards around 70 to 80 years of age in Episkopi, Akrotiri, and Pyrgos, with very low yields that give the wine concentration and a distinctive personality. On the nose, aromas of citrus, white-fleshed fruit, and the characteristic minerality of the volcanic soil stand out. On the palate, it is vibrant, full-bodied, and very well structured, with crisp acidity, pronounced minerality, and a long finish that leaves a sense of freshness and salinity. It pairs ideally with seafood, fish, shellfish, and even lamb cooked in lemon sauce.
