Sole Sweet Biblia Chora Estate

Sole Sweet by Biblia Chora Estate is a naturally sweet white wine that shows the sunniest, most aromatic and enjoyable side of Pangaio. Made from Semillon, with a small contribution of Gewürztraminer, it comes from late-harvest grapes collected in October, with part of them developing noble rot. Here, Biblia Chora Estate leaves for a moment the refreshing strictness of its dry wines and plays with sweetness, aroma and time.

In the glass it has a bright golden-yellow colour and reveals tropical fruit, lime, peach, mandarin, honey, lemon marmalade, flowers and notes of honeycomb. Fermentation in oak barrels and ageing on the lees for at least one year give it richness, depth and a more velvety texture, without losing the freshness that a great sweet wine needs.

On the palate it is sweet, aromatic and full-bodied, with lovely balance between sweetness and acidity, and a finish that leaves honey, citrus fruit and ripe fruit. Serve it chilled with lemon tart, desserts with white creams, fruit, foie gras, blue cheeses or aged salty cheeses. A sweet wine for slow sips, calm finales and moments that call for something finer than a simple dessert.
