Sole Pinot Noir by Biblia Chora Estate is the estate’s more delicate, elegant and rather unexpected red side. Far from heavy, dense reds, here Pinot Noir shows its grace through fruit, freshness and silky texture. On the slopes of Pangaio, Biblia Chora Estate works with this refined French variety through a clean, modern lens, creating a red wine with style without becoming difficult.
In the glass it has a bright purple colour and reveals cherry, mulberry, black cherry, summery red fruit, spices and subtle vanilla. Careful maceration and 12 months of ageing in French oak barrels give it depth and delicate complexity, while keeping the lightness, liveliness and characteristic finesse of Pinot Noir.
On the palate it is dry, juicy and elegant, with velvety tannins, pronounced acidity and a long finish that leaves fruit and spices. Play it slightly cooler and open it with duck, chicken with mushrooms, pasta with white or red sauce, Asian flavours, pork, cold cuts or soft cheeses. A Pinot Noir with fine energy, for those who want a red wine with character but not weight.
