Dreamcatcher Chardonnay by Chateau Kaniaris is a dry white wine PGI Geraneia, made from 100% Chardonnay, with a fruity character, full feel and pleasantly rich texture. It comes from a privately owned vineyard at the foothills of the Geraneia Mountains, at an altitude of around 330 metres, with a Mediterranean climate, sea breezes and sandy-clay soil with a limestone base.
Vinification follows the white winemaking method, with maceration and fermentation at 17-18°C, in order to highlight the clean fruit and the rounder side of Chardonnay. The result is a white wine with a vivid yellowish-white colour, aromas of white-fleshed fruit and a rich, fat taste that stays beautifully on the palate.
In the glass, it brings pear, apple, peach, melon and subtle floral notes. On the palate, it is fresh but also rich, with balanced acidity, soft texture and a long finish, without becoming heavy or excessive.
It pairs very well with seafood, white fish, pasta with light sauces, chicken, pork with lemony or creamy sauce, salads and white cheeses. It is an everyday enjoyable Chardonnay, but with enough structure to stand comfortably next to food.
