Minimus Mi by Chatzivaritis Estate is an Assyrtiko that steps away from the most predictable paths of the variety. It does not chase strictness or an overly polished technical profile. Instead, it leans on natural winemaking, clean raw material and a freer expression that makes the wine lively, full and genuinely interesting.
It comes from organically and biodynamically cultivated vines in Filyria, within the wine-growing area of Goumenissa, on the Slopes of Paiko. Chatzivaritis Estate has linked its name with low-intervention wines and clear character, giving Goumenissa a more modern, restless and creative voice.
In the winemaking process, the grapes are carefully selected, go through a short pre-fermentation cold maceration and ferment spontaneously in stainless steel tanks. The wine is bottled unfined and unfiltered, with very low sulfur addition, while 3 months in old French oak barrels give it volume, depth and a rounder feel, without taking away its freshness.
In the glass, it has a golden colour and a light haze, typical of its natural approach. Aromatically, it shows lemon, lime, green apple, white-fleshed fruit and a subtle honeyed note. On the palate, it is full, lively and persistent, with high acidity, beautiful intensity and a long finish that keeps things interesting until the last sip.
It is an Assyrtiko for those looking for something more authentic, more food-friendly and less “polished”. Try it with fish in lemony or creamy sauces, white meats, risotto, asparagus, dishes with smoky notes or richer recipes that need a white wine with both energy and body.
