Houlevena Hatzimichalis Estate

Choulevena by Domaine Hatzimichalis is a Chardonnay from Atalanti Valley, with clean fruit, a fresh feel and a fresher approach to the variety. It comes from the Choulevena vineyard, one of the estate’s first vineyard sites, with limestone and clay soil and influences from the sea and the surrounding mountains.

Vinification takes place under controlled temperature and the wine does not go through oak at all. This way, Chardonnay comes out cleaner, more direct and more fruit-driven, without the vanilla or buttery side that we often associate with the variety.

In the glass, it brings tropical fruit, white peach, apple, pear, mango, banana and notes of citrus. On the palate, it is rich but not heavy, with mild acidity, refined texture and a pleasant, clean finish.

It pairs very well with seafood meze, shellfish, grilled fish, sardines, calamari, octopus, chicken, white meats with light sauces, salads and vegetables. It is a Chardonnay for anyone who wants the fruity and elegant side of the variety, without oak and without excess.
