Grifos Rosé by Silva Daskalaki Estate is a natural rosé made from Kotsifali, with a more earthy, structured and distinctive personality than a classic fruity rosé. It comes from a biodynamic vineyard in Crete and enters the glass with a deep brick colour, intensity and that slightly wilder element that makes the Grifos range stand out.
Fermentation takes place in amphorae with indigenous yeasts, without sulphite addition, allowing the wine to express itself more freely and authentically. In the glass it reveals cranberry, dried cherry, red fruit, peppery spices and herbal notes, with a character that is both juicy and serious.
On the palate it is dry, full-bodied and lively, with strong structure, pronounced acidity and a long finish. It is not simply a rosé for the balcony; it is a rosé for food. Put it next to poultry, spicy small plates, grilled vegetables, mild and aged cheeses, cold cuts or cod with avocado and tomato, and it will immediately show its more gastronomic character.
