Apiliotis by Domaine Sigalas is a naturally sweet red wine made from 100% Mandilaria, with a distinctive and highly concentrated character. The grapes are sun-dried for about 10 days before vinification, followed by almost 2 years of fermentation in barrels and then one more year of barrel ageing, giving the wine great complexity and depth. On the nose, aromas of wild cherry, cranberry, blackberry jam, and dried fig stand out, together with notes of vanilla, cinnamon, and sweet spices. On the palate, it is rich and layered, with impressive balance between sweetness and vibrant acidity, while the finish is very long and persistent. It pairs beautifully with chocolate desserts, sweets with dried fruit, and blue cheeses.
