Amethystos Cava by Domain Costa Lazaridi is the deepest, most collectible and most serious face of Amethystos. Made from 100% Cabernet Franc, from old vines planted in rocky clay soil, it is a red wine with density, intensity and that charming austerity that immediately shows we are talking about a wine with a long journey ahead.
In the glass it has an almost black, deep red colour and reveals violet, blackcurrant, plum jam, mint, cedar and toasted bread. Ageing for 18 months in new French oak barrels and additional time in the bottle give it power, structure and complexity, without losing balance.
On the palate it is dry, rich and structured, with noticeable but well-crafted tannins, plenty of fruit and a long finish that promises evolution for many years. It calls for flavours with depth next to it: game, beef rib steak, beef in red sauce, slow-cooked lamb, fillet with mushrooms or mature hard cheeses. A red wine for cellaring, large glasses and tables that are not in a hurry.
