Opous IB by Domaine Hatzimichalis is a dry red wine PGI Atalanti Valley, made from 100% Cabernet Franc. It is produced in limited quantities from the Galanos vineyard, in the Pano Ampelia area, a distinctive part of the vineyard that gives low yields and highly concentrated grapes.
Vinification aims to highlight the more elegant and complex side of Cabernet Franc. The wine ages for 12 months in French oak barrels and then remains for 36 months in the bottle, gaining depth, a more integrated texture and great potential to evolve over time.
In the glass, it brings red fruit, tomato leaves, green bell pepper, dried fruit, raisin, cedar, vanilla, smoke and earthy notes. On the palate, it is full-bodied, layered and balanced, with soft tannins, intense concentration and a very long finish.
It pairs very well with grilled mushrooms, smoked steak, pork with a light sweet sauce, small game birds, beef, mature cheeses and fine dining dishes. It is a Cabernet Franc with premium character, for a special table but also for serious time in the cellar.
