Savvatiano Palaia Klimata by Evinos Estate is one of those whites that reminds you why Savvatiano, when it is in the right hands, can produce wines with real depth and character. It comes from vineyards in Mesogeia of Attica that are over 50 years old and is vinified with static settling and controlled fermentation at 17°C, keeping the fruit clean, lively and expressive. In the glass it unfolds aromas of citrus and tropical fruits, with notes of banana, lemon and pineapple, while on the palate it has pleasant acidity, full body and a long finish. It is the wine that fits perfectly at a relaxed table with friends, mezze, fish, white meats or salads, but it also has enough personality to stand on its own in the glass.
