Diaselo Assyrtiko by Palivos Estate is a dry white wine made from 100% Assyrtiko, with strong character, freshness, and very יפה structure. It comes from Ancient Nemea, from a vineyard with limestone soil naturally enriched with silicate clay, a feature that enhances the wine’s tension and purity. In the glass, it shows a bright pale yellow color, while the nose reveals aromas of citrus, white fruit, and mineral hints that give the wine vibrancy and elegance. On the palate, it is dry, full, and balanced, with distinctive acidity and a refreshing finish that adds length and a gastronomic profile. Its vinification with cold extraction, controlled fermentation, and batonnage for at least one month enhances its more layered and refined character.
