Boutari Wineries’ Vidiano is a dry white wine from Crete that shows just how interesting this variety can become when handled with clear focus and proper balance. The grapes come from semi-mountainous areas around Dafnes, are harvested during the coolest hours of the day and go through careful hand selection, so that only the fruit that truly deserves to become wine reaches the winery.
In the winemaking process, whole-bunch pressing, fermentation at controlled temperatures and ageing in tanks and oak barrels with stirring of the fine lees give the wine depth, texture and a beautiful, subtle touch of oak without covering the character of Vidiano.
In the glass, it has a bright white-yellow colour and aromas that move between white-fleshed peach, fresh herbs and an elegant mineral note. The palate is full, with oily texture, crisp acidity and a finish that keeps the interest alive until the last sip.
It is one of those white wines that does not stay only on easy fruit. It has body, energy and character, which is why it stands comfortably next to large fish, white meats, pasta with creamy sauces or dishes with Mediterranean herbs. Best served at 10-12°C, and it opens up beautifully after a little time in the glass.
